Healthiest Greek Salad

Ingredients

  • 1/4 cup extra-virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 large cucumber
  • 1/2 cup kalamata olives
  • 4 large tomatoes, sliced
  • 1 large onion, sliced
  • 4 cups romaine lettuce or other green lettuce of choice
  • 4 ounces feta cheese, diced or crumbled
  • Zest of 1 lemon
  • 1 teaspoon dried oregano

Instructions

  1. In a small bowl, to make the dressing, mix the extra virgin olive oil, vinegar, salt and pepper. You can adjust the amount according to taste.
  2. In a salad serving bowl, mix the lettuce, cucumber, olives, tomatoes, onions, feta, lemon zest and dried oregano. Mix with the dressing when ready to serve.
